Mount Shasta’s Trinity Cafe

The Trinity Café celebrates Billy Truby re-assuming ownership of the fifteen-year-old establishment in April of this year. Truby previously owned the Trinity Café from 2002-2008 and also owns The Goat Tavern. Much of the Trinity is back as it was prior to the operating choices of last year’s temporary management. It still offers both indoor and outside seating, an international selection of wine, served alongside the upscale atmosphere and food; but without the upscale prices. With the old comes the new, like Chef Seth Stanton’s dinner menu, which changes regularly and offers fifteen items at $10 or less. In the $18 – $25 range, customers may dine on Scallops served with sweet pea risotto, oyster mushrooms, and tarragon pesto or the Filet Mignon paired with broccolini, buttermilk whipped potatoes, and bleu cheese butter. The extensive wine list offers a variety of wines from places like California’s Napa Valley, Italy, and Spain with bottle prices varying from Cline’s Cashmere at $28 to the $80 Marchesi di Barolo. Many wines are offered by the glass as well. In addition to the Trinity Café’s Tuesday through Saturday dinner hours of 5pm to 9pm, Chef Kevin Lahey cooks up Sunday Brunch every week from 9am to 2pm. Lahey’s fresh made to order brunch menu includes traditional items like Eggs Benedict with house made Hollandaise sauce, Blueberry Pancakes, and more inventive choices like Huevos Mt. Shasta with fresh roasted green green chiles and the ever-popular Guacamole Benedict. Locals and travelers alike are very excited to have fine dining again in Mount Shasta.
